Default How do I pay myself in a non-profit organization?

I formed a non-profit (very ligit incorporated/ filed with the state) over 2 years ago. It's a helps ministry designed to help people in the community. I have a kids division in which we do volunteer work a couple times a month. Well, i want to wean myself from my day job and go full time into the ministry by doing counseling in my house. Im the soul owner/ opporator, etc... So, how do i pay myself for each counseling appointment without getting into needing to pay into unemployment and all the tax stuff that business employers have to pay when they have employees. I dont want to do anything illegal or questionable. So what can i do to be legal yet avoid all the paperwork of a normal business?
OH, dont get me wrong, I claim every dollar i make on my taxes and know i'll have to pay "self employment taxes" and stuff like that. What im saying is, do i have to do payroll and all that other stuff, or can i just write out a check to myself from my non-profit account, then claim it on my personal taxes.

Sorry-a non profit has all the same requirements of a "normal" business.
